Parsley (Petroselinum sativum) is a plant of Mediterranean climate, now grown throughout Europe. Its medicinal raw materials and food products are: root (Radix Petroselini) and herb (Herba Petroselini - tops) and fruit (Fructus Petroselini - seeds). Specific materials have a number of components (among others, include flavonoids, furanocoumarin, polyacetylene compounds, mucilages, sugars, ascorbic acid, provitamin A, manganese. Parsley is a rich source of pro-vitamin A, minerals (phosphorus, manganese, potassium, sodium, calcium, iron), and fruit – an essential oil, phytosterols and flavonoids. The different parts of parsley are urinary and carminative, antispasmodic, and stimulate digestion. The use of aqueous extracts of parsley allows quick getting rid of subcutaneous water, which is used among athletes taking sports with weight limits. In sports supplementation, the diuretic abilities of parsley are used, allowing the increase in the glomerular filtration rate, while inhibiting resorption.
