Collagen biosynthesis belongs to the most important biological functions of vitamin C in the human body. According to reports from various sources, collagen can constitute even 25-40 per cent of the total amount of proteins in the system. Collagen supports the structure of skin, teeth, bones, connective tissue, cartilage and cornea. Ascorbic acid participates in the hydroxylation of proline residues and lysine to hydroxyproline and hydroxylysine. It delivers electrons to enzymes that participate in hydroxylation, which results in the conversion of procollagen to proper collagen.

Vitamin C takes part in the synthesis of hormones and neurotransmitters, e.g. noradrenaline. Ascorbic acid cooperates with hydroxylases which participate in the conversion of steroids and fats (e.g. cholesterol into bile acids). It increases the absorbability of non-heme iron and calcium.
