Ascorbic acid constitutes a cofactor of prolyl and lysyl hydroxylase. These are enzymes responsible for collagen fiber crossing. Non-heme iron can be found in vegetable products. Vitamin C reduces iron (III) to iron (II) in the one-electron reaction. Iron is well-absorbable in the duodenum, when it appears in the reduced form (divalent).

Consequences of chronic deficiency of vitamin C are serious. Deficiency increases the risk of developing atherosclerotic and atherogenic lesions. The risk of carcinogenesis is higher.
