They are converted in the organism to nitrites (NO2-) and then transformed to nitric oxide (NO). Importantly, this process is the most efficient with low pH and small oxygen availability and such conditions appear in skeletal muscles during physical effort. Apart from increasing endurance, beetroot juice may also improve muscle strength.
